Asian palm civets, formally referred to as Paradoxurus, are small animals that are native to Sumatra and look like a cat. These animals want to eat the ripe Kopi Luwak espresso beans whole. The espresso beans then exit the civet, which is in which the name "cat poop" is derived. Then the beans are gathered, cleaned and ground into coffee.

Due to this extensive collection process, typically only 500 to 1,000 pounds of Kopi Luwak espresso beans are collected each year. This limited quantity of beans available puts an unusual popular about this type of bean making it extremely expensive to purchase. Buyers can expect to pay from $100 to $600 for just one pound of coffee beans. The rich flavors of the coffee also develop a popular with this product. Many feel that cat poop coffee taste superior as the civets are incredibly selective about which coffees they eat and also the unique changes that occur to the beans through digestion.
